Red Pepper and Halloumi Bites

Red Pepper and Halloumi Bites

"A gorgeous side dish that will be a hit at your summer BBQ. Flavoursome and rich in nutrients, give these a go!" 

  • 3 medium red peppers
  • 250g halloumi cheese 
  • dried basil 
  • 6 tbsp basil oil 
  • wooden skwerers 
  1. Cut the halloumi into 12 evenly sized rectangle pieces 
  2. Deseed and quarter the peppers 
  3. Place a piece of halloumi into each pepper piece
  4. Thread onto skewers - see picture
  5. Sprinkle dried basil over the top and drizzle with basil oil 
  6. Cook on a medium grill or barbecue for 2 minutes pepper side down, then turn and cook for one minute cheese side down 
  7. Turn back over and cook for a further minute pepper side down 
  8. Serve immediately.
