Thai Green Curry Paste

"Homemade and tastier than shop bought.  Why not double up the ingredients and freeze some for later"

  • 15 large fresh green hot chilies
  • 3 shallots
  • 9 cloves garlic
  • 1 tsp fresh ginger
  • 1 tbsp fresh lemon grass
  • 1/2 tsp lime zest
  • 1 tsp coriander root
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp sea salt
  • Water as needed 
  1. Roughly slice the shallots, ginger, lemon grass, lime zest and coriander. 
  2. Heat a dry frying pan and add the coriander and cumin seeds. Roast until they begin to colour. Remove from the heat, then grind to a powder using a blender or pestle and mortar. 
  3. Put the garlic in a blender or pound using a pestle and mortar, then add the shallots, coriander roots, chillies, ginger, lemongrass and 2 tsp salt.
  4. Finally, add the lime, basil and the ground spices, then whizz or pound until you have a smooth paste. 
  5. Add a small amount of water when needed if the paste will not blend. 
  6. Dont forget this can be frozen
  7. Enjoy!
