Vibrant Veggie Burger

Vibrant Veggie Burger

"Veggie or not, you will love these brilliant burgers. Packed with flavour and high in fibre - you must give these a try. Kids love them!" 

  • 1 tbsp coconut oil
  • 1 onion
  • 1 carrot
  • 1/2 red pepper
  • 3 garlic cloves
  • 2 tbsp tomato puree
  • 2 tsp dried herbs
  • 1 tsp oregano
  • 2 tsp ground flaxseed
  • 400g kidney beans or black beans
  • 200g brown rice
  • 50g chopped nuts
  • salt and black pepper
  • 3 tbsp Almond Flour 
  1. Finely chop the onion and garlic, dice pepper and grate the carrot
  2. Cook the kidney beans and brown rice separately according to instructions and put to one side ready for later
  3. Melt 1 tbsp coconut oil in a saucepan
  4. Add onion, garlic,  dried herbs, oregano, red pepper and tomato puree
  5. Stir fry for 3 minutes
  6. Chop beans and rice in a blender. 
  7. Add onion mix, carrot, flaxseed and nuts. Blend briefly.
  8. Season with salt and pepper
  9. Chill the mix in the fridge for 15 minutes
  10. Dust work surface with almond flour
  11. Make 6 – 8 burger shapes. Place on a baking sheet and chill
  12. Melt 1 tbsp of coconut oil in a frying pan on a high heat
  13. Fry burgers until brown, approximately 10 minutes
  14. Enjoy!
