Super Food Soup

"This flu fighting, vitamin rich bowl of goodness could not be more tasty! Kids love this and its an easy way to get them full of essential micronutrients without them knowing. Ssssh"! 

  • 150grams of spinach
  • 2 medium carrots
  • 1 white onion
  • 150g of broccoli florets
  • 2 tbsp coconut oil
  • 1 garlic clove
  • 1 tbsp corrinader
  • 2 tbsp flaxseed
  • pinch of salt
  • ground black pepper
  • 400ml water
  • Spoonful of greek yoghurt 
  1. Crush the garlic and peel and chop the onion and carrot 
  2. Heat coconut oil in a pan and sauté onion and garlic until brown and soft, then add the carrot and repeat the process
  3. Add water to the pan and bring to the boil
  4. Add broccoli florets, gently simmer for 10mins
  5. Add spinach and stir for a further 5 minutes
  6. Add coriander, flaxseed and season to taste
  7. Transfer the mix into a food processor and puree to your preference
  8. Heat gently and serve topped with yoghurt.
