Spicy Butternut Squash Soup

Spicy Butternut Squash Soup

"A colourful bowl of goodness, a real winter warmer."

  • 1 Butternut Squash
  • 1 red onion
  • 2 garlic cloves
  • 1 red chilli
  •  Bunch of fresh coriander
  • 1/2 tsp of cumin seeds
  • 1 1/2 pints of vegetable stock
  • Coconut Oil 
  1. Start by preparing the ingredients. Peel and dice the butternut squash, chop the onion, chilli and coriander and crush the garlic. 
  2. Fry the onion, garlic, coriander leaves and chilli in coconut oil for 30 seconds to release the flavour, add the diced butternut squash and onion for 2 minutes so they are covered in the spice mixture.
  3. Cover the mixture with stock and simmer for 30 minutes. 
  4. Let the soup cool and then blend in batches until smooth. 
  5. Season with salt and pepper to taste
