Spiced Sweet Potato Fishcakes

Spiced Sweet Potato Fishcakes

A great one for the children to get involved with, a favourite for all the family. 

  • 2 cod fillets 
  • 2 large sweet potatoes
  • 2 cloves garlic
  • 1 red chilli
  • 6 Chives
  • Organic unsalted butter 
  1. Wrap the cod fillets in foil and place in oven for 25 minutes at 200c.
  2. Crush the garlic and finely chop the chives and chilli (optional) 
  3.  Once the cod is cooked, leave out to cool.
  4. Peel and steam sweet potatoes, once soft mash with a cube of organic butter and place in a bowl to cool. 
  5. Flake cod into the mash, watching out for bones. 
  6. Then add garlic, chilli and chives.
  7. Mix all ingredients together. Place in fridge for 1-2 hours.
  8. Take the fishcakes out of the fridge and mould into 4 patties. 
  9. Place fishcakes in oven for 30 minutes until golden brown.
