Quinoa and Grilled Mango Salad

Quinoa and Grilled Mango Salad

"Light, fiery, fruity and fun accompaniment to your summer BBQ. Try dressing with one of our homemade salad dressings for an extra kick!" 

  • 110g cooked quinoa
  • 1 green chillies
  • 1 red chilli 
  • ½ cup fresh mint, chopped
  • 50g fresh coriander, chopped
  • 3 spring onions, choppeds
  • 3 cherry tomatoes 
  • 1 mango, peeled in large slices
  • ½ pomegranate
  • 1 tbsp coconut oil
  • 1 lemon 
  1. Peel and chop the mango into long slices, then grill half of the mango in a griddle pan with coconut oil and place the other half to one side.
  2. Chop the tomatoes, mint, coriander, spring onions and chillies to your liking.
  3. Combine all of the ingredients, including the remaining mango slices in a bowl and squeeze the juice from a fresh lemon or a homemade dressing (see sauces) over the ingredients.
  4. Toss the salad evenly and garnish
