Lettuce & Tuna Spice Boats

"This is a great alternative to the usual wraps and sandwiches! Why not dress them up with a little sail for the kids! They will love them, a packed lunch favourite from Eat Clean Cuisine". 

  • 1 cos lettuce 
  • 1 tuna steak 
  • 1 big ripe tomato 
  • 1 yellow pepper
  • ½ onion
  • 1 red chilli
  • 1 tsp soy sauce
  • 1 ripe avocado
  • extra virgin olive oil
  • salt and ground balck pepper
  1. Wash the cos lettuce and separate the larger leaves that you would like to use
  2. Peel avocado and chop into small cubes. 
  3. Chop tomato and yellow pepper into similar size cubes. 
  4. Finely chop the chilli and onion, deseed if you don't like it too spicy 
  5. Start by searing the tuna to your liking. 
  6. In a big bowl put the tuna, chopped tomato, chilli, pepper, avocado and onion.
  7. Add salt and pepper, 2 tbsp of olive oil and soy sauce.
  8. Take a couple of lettuce leaves, and with a spoon arrange the tuna salad mix along the leaves.
  9. If the lettuce leaves are big, you can fold them as if it was a wrap, otherwise simply tuck into these super hot boats, you’ll love ‘em!
