Italian Chicken and Mozzarella Salad

Italian Chicken and Mozzarella Salad

"Light, creamy and easy. Put this together any lunch time for a delicious treat in minutes". 

  • 1 chicken breast
  • 3 tbsp italian seasoning 
  • 1 tbsp coconut oil 
  • 1/4 ball of mozzarella 
  • 1/4 cucumber 
  • Handful of mixed leaf salad 
  1. Heat grill to medium-high heat.
  2. Slice the chicken into thin slices, to cook quicker
  3. Season the chicken with the italian herbs and rub in the coconut oil
  4. Grill until cooked through, about 5 minutes per side.
  5. Meanwhile, combine the chopped cucumber, mozzarella, and salad in a bowl. 
  6. Add the chicken 
  7. Enjoy
