Courgette and Asparagus parcels

'' A great way to cook vegetables, these little parcels are full of flavour with a more distinct flavour than when steamed or boiled. Why not try some variations of this recipe?" 

  • 2 medium courgettes 
  • 1 medium leek 
  • 12 asparagus spears 
  • 4 sprigs of tarragon  
  • 4 garlic cloves, unpeeled
  • Salt 
  • Pepper
  1. Preheat the oven at 200 degrees.
  2. Using a potato peeler, thinly slice the courgette into long ribbons.
  3. Cut the leek into thin circles and pull out into rings.
  4. Slice the asparagus into 2cm chunks.
  5. Cut out four sheets of greaseproof baking paper and fold in half.
  6. Draw a large curve in the paper, so when you cut and open it, it becomes a heart shape. 
  7. Cut along the inside of the line and open. 
  8. Add even amounts of each vegetable onto each parcel and then fold and start to wrap around the edges.
  9. Start from one end and roll tightly.
  10. Lay on a baking tray and cook for 10-12 minutes.
