Chilli Lettuce Bowl

Chilli Lettuce Bowl

"A light dish with a hot and cold contrast! Simple, cheap, easy and filling - a week night dream!" 

  • 2 medium onions
  • 1 clove of garlic
  • 1 red pepper 
  • 1 yellow pepper 
  • 1 tbsp olive oil
  • 2 tsp chilli powder
  • 1 heaped tsp ground cumin
  • salt and black pepper
  • 500g lean minced beef
  • 2 x 400g tin tomatoes
  • 1 lettuce
  1. Use a large wok for the chilli
  2. Finely chop the onion and garlic, then fry in a little oil until soft.
  3. Deseed and finely chop the peppers 
  4. Add the chilli powder, cumin and a little seasoning.
  5. Add the mince and continue to cook, stirring until browned.
  6. Add the tomatoes, peppers and a glass of water
  7. Bring to the boil and simmer for 30 minutes
  8. Rip the lettuce leaves from the outside edge and create a bowl on the plate 
  9. Add in the chilli mixture
  10. Great serve with a dollop of sour cream or guacamole (see dips) 
  11. Enjoy!
