Chickpea Broth

Chickpea Broth

"Warming, filling, soothing. Gorgeous winter evening meal!"

  • 400g canned chickpeas
  • 200g red lentils
  • 100ml vegetable stock
  • 2 garlic cloves
  • Salt
  • Freshly ground black pepper 
  • Fresh Parsley 
  1. Rinse and drain the chickpeas.
  2. Cook red lentils according to packet instructions and place to one side. 
  3. Peel and finely chop the garlic.
  4. Place the chickpeas, lentils, stock and garlic into a saucepan. 
  5. Bring to the boil, then reduce the heat until the mixture is simmering.
  6. Simmer until the chickpeas are tender, this should take approximately 4-6 minutes.
  7. Remove from the heat and blend until smooth.
  8. Season to taste.
  9. Enjoy!
