Chickpea and Coriander Burgers

Chickpea and Coriander Burgers

"The ultimate vegan burger! Wow. Seriously flavoursome"

  • 400g can chickpeas
  • 1 lemon
  • 1 tsp ground cumin
  • small bunch coriander
  • 1 egg
  • 50g almond flour
  • 1 medium red onion
  • 1 tbsp extra virgin olive oil
  1. Zest the lemon, juice half the lemon
  2. Blend the chickpeas, lemon zest, lemon juice, cumin, egg, a handful of the fresh coriander, salt and pepper in a food processor. 
  3. Put into a large bowl and add the almond flour, bit by bit until slightly thickened. 
  4. Add the diced onions. 
  5. Place the mixture into 4 patties, then dust with the remaining flour. 
  6. Let the burgers chill in the fridge for a minimum of 10 minutes.
  7. Heat the oil in a frying pan until hot. 
  8. Fry the burgers for 4 mins each side on a medium heat. 
  9. Serve and enjoy.
