Chicken, Quinoa and Halloumi Salad

"High in protein and iron, this warming summer salad is so scrummy!" 

  • 1 chicken breast 
  • 50g halloumi cheese 
  • 50g cooked quinoa 
  • rocket Salad 
  • 1/2 red pepper 
  • 1 tsp extra virgin olive oil 
  1. Thinly slice the chicken breast and season, if desired. 
  2. Place chicken on a griddle pan at medium heat and drizzle with olive oil for 5 minutes, then turn.
  3. Slice halloumi into thin, even slices and place into the griddle pan for 2 minutes, either side. 
  4. Deseed and slice the pepper into thin slices 
  5. Combine all the salad pieces together
  6. Enjoy!
