Broccoli and Mint Soup

Broccoli and Mint Soup

"A simple recipe for all seasons; a comforting winter warming supper. Alternatively, served cold with lots of fresh mint in the summer months"

  • 1 large onion
  • 1 tbsp coconut oil
  • 1 large head of broccoli
  • 750ml vegetable stock
  • Small bunch of mint leaves 
  1. Dice the onion and shred the mint leaves, put to one side 
  2. Fry onion in a large pan with oil on medium heat
  3. Add broccoli and stock and simmer for 10 - 15 minutes or until broccoli has softened. Cool slightly.
  4. Place in a food processor with mint leaves or use an electric blender to form a smooth texture.
  5. Heat to serve.
