Beefy Burger and Spicy Paprika Wedges

"This healthy beef burger is great for dinner parties as well as a tasty meal  for kids!! Serving them with moorish sweet potato fries makes it feel that little more naughty. Fab served with salsa!"

  • 500g extra lean beef mince
  • 1 onion
  • 1 chilli 
  • 1 egg
  • 2 large sweet potatoes
  • ½tsp chilli powder
  • 1 tsp paprika
  • 1 tbsp coconut oil 

BURGERS:

  1. Finely chop the onion and chilli. Place in a large bowl, add mince and beaten egg, thoroughly mix all ingredients together. Divide into 4 portions.
  2. Knead each portion so it all sticks together nicely, then flatten into a burger shape.
  3. Heat coconut oil in a frying pan and shallow fry the burgers for around 4 minutes each side. 

WEDGES:

  1. Heat oven to 200C/400F/Gas 6
  2. Slice sweet potatoes into wedges.
  3. In a large bowl place wedges, chilli powder and paprika. Add melted oil. coating all the sweet potatoes. 
  4. Place wedges on a large baking tray, place in oven for 30-40 minutes.
  5. Serve and enjoy!
