Spiced Winter Vegetables

" A lovely festive take on the usual roasties, a hit with all family and friends on Christmas Day!! "

  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cayenne pepper
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil 
  • 5 medium parsnips
  • 5 medium carrots
  • 2 medium sweet potatoes
  1. Preheat the oven to 220 degrees.
  2. Peel all the vegetables and give them a good wash. 
  3. Whisk together the cumin, coriander, ginger, salt, cinnamon, cayenne, honey and oil in a large mixing bowl to form a glaze. 
  4. Cut everything into similar size chunks. 
  5. Add the vegetables and glaze into a baking dish and toss evenly. 
  6. Roast for 45 minutes until brown and crisp.
  7. Serve warm and enjoy!
