Quick Chick 'Pizza'

"This italian inspired recipe is gorgeous and light, try with different toppings - be creative! Lovely with homemade walnut pesto... a family favourite!"

  • 2 chicken breasts
  • 1 tube tomato puree
  • 1 red pepper
  • 1 onion
  • 50g goats cheese
  • 8 Walnuts  
  1. Finely chop the red pepper, onion and crush the walnuts. 
  2. Pre-heat the oven temperature at 180C/350F/Gas 4 
  3. Butterfly- cut the chicken breasts and flatten out.
  4. Thinly cover with tomato puree.
  5. Sprinkle peppers and onions over the top.
  6. Place on a baking tray in a pre-heated oven for 15 - 20 minutes.
  7. Remove and sprinkle with goats cheese and walnuts or choose another topping of your choice - ham is nice! 
  8. Place back in oven for 5 minutes then serve.
