Mushroom Medley Ragout

"Great side dish at family gatherings and dinner parties. Try serving along a variety of your favourite Asian dishes and create a tapas!" 

  • 1 tsp coconut oil
  • 150g Shiitake Mushrooms, sliced
  • 150g Oyster Mushrooms, sliced
  • 150g Button Mushrooms, sliced
  • 150g Enoki Mushrooms, cut into chunks
  • 1 spring onion
  • 2fl oz coconut milk
  • 1fl oz water
  • salt and pepper
  1. Heat the coconut oil in a skillet.
  2. When skillet is piping hot, add the button, oyster and shiitake mushrooms. 
  3. Season to taste and cook until golden brown.
  4. Add the enoki mushrooms and continue cooking, until softened.
  5. Add the coconut milk, water and sliced spring onion and stir until all the mushrooms are well coated - add extra if desired. 
  6. Serve and enjoy.
