Cranberry and Walnut Stuffing

" This is so tasty!! Serve this with any Sunday roast or use as a replacement to meat on a dish. The flavours are awesome! " 

  • 2 tbsp unsalted butter
  • 1 onion
  • 1 celery
  • 120g cranberries 
  • 120g walnut pieces
  • 100g almond flour
  • 3 tbsp lemon juice
  • 2 tsp ground thyme
  • 1/2 tsp salt
  • 1/2 tsp ground pepper 
  1. Pre heat the oven to 180 degrees. 
  2. Chop the onion and celery into small pieces. 
  3. In a pan, melt the butter and add the onions and celery, brown until soft. 
  4. Take off the heat and add into a mixing bowl, then add the rest of the ingredients. 
  5. Mix together and put into a small baking dish. 
  6. Put into the oven for 20-30 minutes, until crisp on the top. 
  7. Bring out of the oven and leave to cool slightly. 
  8. Enjoy!
