Chilli Chicken with Sun dried Tomato and Spring Onion Mash

"A change to the normal meat and two veg. A tangy, Mediterranean style dish packed full of flavour!" 

  • 1 chicken breast 
  • 1 sweet potato 
  • 1 spring onion
  • 3 sun dried tomatoes 
  • 1 tbsp harissa paste 
  • 2 tbsp greek yoghurt 
  • unsalted butter
  • salt and pepper
  1. Heat oven 200C/400F/Gas 6
  2. Mix together the yoghurt and harissa paste, thoroughly 
  3. Cover the chicken in the mixture and set to one side to marinate for an hour
  4. Put the chicken into some tin foil and wrap into a parcel
  5. Place in the oven for 20 minutes  
  6. Peel sweet potato and cut into similar size chunks, simmer in boiling water until soft
  7. Mash potatoes, add in the butter to your taste until smooth and creamy 
  8. Thinly slice the sundries tomatoes and spring onions and stir in whilst the potato is warm 
  9. Plate up with the chicken 
  10. Enjoy!
