Volcano Cookies

"Exploding full of chocolatey goodness!!! Yummy!!! "

  • 2 teaspoons vanilla extract
  • 1 large egg
  • 4 tablespoons maple syrup
  • 100g coconut oil
  • 1 and 1/2 cups almond flour 
  • 1 teaspoon baking soda
  • 2 tbsp cocoa powder 
  • Pinch of salt
  • 60g 70% dark chocolate 
  1. Combine the vanilla, egg, and maple syrup in a bowl
  2. Melt the coconut oil and add it to the bowl slowly stirring.
  3. Beat everything together until just combined.
  4. Stir in the almond flour, cocoa powder and baking soda
  5. Stir until just combined 
  6. Chill the dough if possible for 30 minutes
  7. Preheat the oven to 180 degrees
  8. Make the cookie dough into small balls and place on parchment paper on a baking tray
  9. Chop the dark chocolate into chunks
  10. Push large squares of dark chocolate into the middle of the cookies
  11. Flatten them down into small cookie shaped circles
  12. Bake for 8-10 minutes.
  13. Let them cool on a wire cooling rack before serving! 
  14. Gorgeous served with some frozen yogurt!
  15. Enjoy!!
