Sweet Potato Brownies

Sweet Potato Brownies

"Brownies... Healthy Brownies... Healthy Chocolate Brownies. Yes, you heard right!! Do not miss out on this recipe, just delicious!"  

  • 4 Sweet Potatoes 
  • 240g Almond Butter
  • 3 tablespoons of unsweetened cocoa powder
  • 1 Egg
  • 4tbsps of Maple Syrup
  • 1 teaspoon of vanilla
  • 2 teaspoons of cinnamon
  • 1 teaspoon of baking soda
  1. Pierce the sweet potatoes and bake for one hour at 220 degrees - this can be done the day before and stored in the fridge to make things quicker
  2. Preheat oven to 180 degrees 
  3. Mash the sweet potatoes until they have a smooth, creamy texture 
  4. Add and mix all of the ingredients in a bowl. Adding the egg last. 
  5. Line an 8 by 8 pan with parchment paper
  6. Once all the ingredients have been mixed, pour batter into the baking dish
  7. Bake for 25 minutes. 
  8. Leave to cool for 10-15 mins 
  9. Enjoy
