Chocolate Avocado Cookies

Chocolate Avocado Cookies

"Gluten free? Eating Clean? This is the dessert for you - do not knock it before you try it. Gooey, oozing chocolate.. Yum!" 

  • 1 ripe avocado (need about 100g of flesh)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 150g coconut sugar
  • 50g cocoa powder
  • pinch of salt
  • 50g rice flour
  • 100g 70% dark chocolate

  1. Preheat oven to 180C/350F/Gas 4
  2. Mix together avocado and coconut sugar until smooth - using hand mixer. 
  3. Add in the egg.
  4. Mix in the cocoa powder and baking soda.
  5. Stir in chocolate chunks.
  6. Cover baking sheet in parchment, place dollops of cookie dough onto the tray.
  7. Flatten each cookie with the back of a spoon, leaving enough room for them to spread during cooking.
  8. Bake for 8-10 minutes
  9. Cool down on the tray 
  10. Store in an airtight container in the fridge - they will go gooey if left overnight.
