Choc Chip Cookies

Choc Chip Cookies

"Kiddies favourite, without the naughtiness! They will never know" 

  • 2 tsp vanilla extract
  • 1 large egg
  • 4 tbsp maple syrup
  • 100g coconut oil
  • 135g oats
  • 1 tsp baking soda
  • Pinch of salt
  • 90g 70% dark chocolate chips
  1. Preheat the oven to 180C/350F/Gas 4 
  2. Blend the oats until you get a dusty flour 
  3. Combine the vanilla, egg, and maple syrup in a bowl.
  4. Melt the coconut oil and add it to the bowl slowly stirring.
  5. Beat everything together until just combined.
  6. Stir in the oat flour and baking soda
  7. Fold in the dark chocolate chips.
  8. Chill the dough if possible for 30 minutes 
  9. Make the cookie dough into small balls and place on parchment paper on a baking tray
  10. Push them down into small cookie shaped circles
  11. Add more topping if you would like at this point before baking
  12. Bake for 8-10 minutes.
  13. Cool on a baking tray, store in airtight tin - if they last that long!
