Scrambled Eggs and Smoked Salmon

"A luxurious breakfast for any occasion, a favourite!" 

  • 2 large eggs
  • Fresh sea salt
  • Ground black pepper to taste
  • 1 tsp coconut oil
  • 2 spring onions
  • 2 slices smoked salmon
  • Fresh chives 
  1. Combine eggs and seasoning to your taste in a small bowl.
  2. Stir briskly with a fork until well blended.
  3. Heat oil in a non-stick frying pan over a medium-low heat. 
  4. Thinly slice the green tops of the spring onions
  5. Add spring onions and cook, stirring until softened - this should take about 30 seconds
  6. Pour the eggs into the pan and cook until they just begin to set, then stir in salmon. 
  7. Alternatively, serve separate if you prefer your salmon raw. 
  8. Cook for about 3-5 minutes, stirring gently from time to time, until the eggs have thickened into soft creamy curds.
  9. Top with freshly chopped chives.
  10. Serve immediately.
