Salmon and Asparagus Frittata

Salmon and Asparagus Frittata

A luxurious brunch idea that is easily made with any left overs at the end of the week! 

  • 4 Eggs
  • 50g Coconut milk
  • 125g Smoked Salmon
  • 6 Asparagus spear
  • 1 Red Onion
  • 1 Clove Garlic
  • Handful of basil leaves
  • Coconut Oil
  • Sea salt and black pepper to taste 
  1. Preheat oven to 200c prior to cooking and heat a small frying pan in oven with 1 tbsp of oil.
  2. Trim and chop the asparagus, onion and crush the garlic. 
  3. Blend eggs, milk and seasoning in a blender until fluffy.
  4. Pour onions, asparagus and garlic into the hot pan and stir for 2- 3 minutes
  5. Top with salmon and egg mixture.
  6. Bake in hot oven for 15 - 20 minutes.
  7. Enjoy
