Overnight Bircher Muesli

"Simple, dairy free breakfast which is brilliant for busy people - especially when you want to just grab something in the morning.  Why not try topping with fresh fruit, tremendous!" 

  • 500g porridge oats
  • 60g flaked almonds or cashews
  • 30g flax seeds or chia seeds
  • 30g dried cranberries 
  • 250ml coconut milk
  1. Mix all of the dry ingredients together in a big bowl
  2. Spread the mix thinly across a baking tray and toast in a low heated oven (140C/275F/Gas 1) until lightly browned and fully dried.
  3. Add coconut milk and leave until all the liquid is absorbed by the oats, preferably over night.
  4. Serve with coconut milk when cooled if needed.
  5. Can also try with almond milk for a change, really tasty!
  6. Top with nuts and fruit.
