Herby Eggs

Herby Eggs

"Simple, but splendid" 

  • 1 tbsp coconut oil
  • 1 small red onion
  • 1 garlic clove
  • 200g tin of plum tomatoes
  • 1 tbsp fresh parsley
  • 1 tbsp fresh coriander
  • 1 tbsp fresh oregano
  • 3 large eggs
  • salt and pepper
  1. Chop the onion, garlic, parsley, oregano and coriander finely. 
  2. Drained and chop the tinned tomatoes. 
  3. Heat the coconut oil in a medium sized frying pan and heat
  4. Add the onion and garlic, sauté for 4-5minutes
  5. Stir in the tomatoes and fresh herbs and simmer for 10 minutes
  6. Crack the eggs over the top of the mixture
  7. Cook for 4-5minutes
  8. Season to taste and serve immediately.
