Crunchy Cashew Granola

"Crispy, crunchy, cashew nut granola; this easy recipe is ideal for a energy filled breakfast" 

  • 200g rolled oats
  • 10g unsalted butter
  • 120g chopped cashews
  • 1 tsp vanilla essence 
  • 2 tsp minced fresh ginger 
  1. Preheat the oven to 150C/300F/Gas 2
  2. Melt the butter in a pan, do not allow to burn. 
  3. Line a baking sheet with parchment
  4. Thoroughly combine rolled oats and melted butter in a mixing bowl. 
  5. Spread evenly on the baking sheet.
  6. Bake for 45-55 minutes, stirring every ten minutes, until oats are lightly coloured.
  7. Add cashews, ginger, and vanilla after 20 minutes and stir in thoroughly.
  8.  Serve or store in a covered container.
  9. You can keep in the fridge for up to a month.
