Bubbly Bacon Pancakes

"What better combination than eggs and bacon? Sunday brunch winner!"

  • 4 slices of turkey bacon
  • 6 medium size eggs
  • 2 spring onions
  • 1tsp coconut oil
  • 1 tbsp chives 
  • Salt and pepper
  1. Grill the turkey bacon until crisp
  2. Whisk the eggs together with a pinch of salt and pepper
  3. Heat oil in pan add chopped spring onions and fry until soft.
  4. Cut up the turkey bacon into long slices and layer over the cooked onions
  5. Cover with a thin layer of egg, wait until cooked then flip and repeat the process.
  6. Garnish with chives, salt and pepper to taste.
