Breakfast Buns

"These mini quiche type buns are just scrumptious. An Eat Clean Cuisine favourite - make them at the start of the week for a quick grab and go breakfast or snack" 

  • 12 medium sized eggs
  • Handful of spinach 
  • 12 cherry tomatoes 
  • 3 spring onions 
  • 4 rashers of lean unsmoked bacon 
  • Fresh chives 
  • 75g feta cheese 
  • chilli flakes 
  1. Pre-heat the oven to 180C/350F/Gas 4.
  2. Chop everything into small pieces.
  3. Fill 12 medium sized muffin cases to about half full with the raw bacon, tomatoes, spinach and spring onions.
  4. Beat eggs and add to each muffin case leaving a small gap at the top.
  5. Top up muffins with a sprinkling of feta, chives and chill.
  6. Season to taste.
  7. Bake for 10-12 minutes, checking every 5 minutes.
  8. Rest on a baking tray, enjoy!
