Bacon and Maple Stack

Bacon and Maple Stack

A classic of the pancake world!!!!! Yum - and obviously guilt free. Too good to miss! 

  • 130g almond flour
  • 2 eggs
  • 3 tbsp coconut milk
  • 1 vanilla pod
  • 1 tbsp ground cinnamon
  • Coconut oil 
  • Handful of Blueberries 
  • Squeeze of maple syrup 
  • 2 rashers of turkey bacon 
  1. Scrape the seeds out of the vanilla pod. 
  2. Mix eggs, coconut milk and vanilla in a bowl and whisk together.
  3. Sift in almond flour and cinnamon and mix well.
  4. Heat a large pan over a medium heat; heat 1tsp of coconut oil in a pan and add pancake batter in small rounds, quickly turning the pan around to spread the batter evenly.
  5. Put the turkey bacon under a medium grill until crisp. 
  6. Cook the pancakes until brown on the underside, about 45 seconds and then flip to brown other side.
  7. Top with blueberries and a glug of maple syrup and enjoy - guilt free!
